Ensuring food security and healthy nutrition for a growing population whilst respecting the earth’s planetary boundaries and coping with disasters such as COVID-19 is an urgent and complex challenge. Yet even before the pandemic, chronic hunger and food-related ill-health was trending upward. How can we explain the paradox of people going hungry in a world of plenty? What solutions exist for ensuring sustain-able diets for all, and how are they being implemented? This course develops participants’ knowledge and understanding of how today’s global food system functions – the underlying power structures, incentives and their broader impact. It highlights the interconnections between food, health, poverty and the environment, and examines different pathways for transitioning towards sustainable and resilient food systems at the global, national and local levels.
